YOUR MOMS HOUSE
Ingredients
baked potatoes, slightly cooled
salt and pepper
shredded cheese
eggs
additional fillings of your choice (we used spinach and bacon)

Instructions: Preheat oven to 350 degrees.

Slice a layer off the top of each potato and scoop out most of the inside, leaving a thin layer of potato against the skin and avoiding puncturing the bottom. (Use the insides for something else delicious... mashed potatoes?)

Stuff each potato with your fillings and cheese. Crack one egg inside and sprinkle with salt and pepper. Fill each potato about 3/4 full. Top with additional cheese and toppings if desired.

Place potatoes on a baking sheet and cook for about 20 minutes. Egg whites should be set and yolks soft.
