    Default Thia Pineapple Salad

    This is cool and refreshing addition to a meal, or great to take to a pitch-in supper.

    Thia Pineapple Salad

    1 ea Pineapple (in season, I guess canned would be okay)
    1/2 C Sugar
    1 hand Cilantro
    1/2 C Toasted Coconut

    Slice pineapple into thin chunks, put in a serving bowl
    Place 1/2 cup sugar and cilantro into food processor, or blender and combine well.
    Pour sugar and cilantro mixture over pineapple, quick toss to coat
    Add 1/2 cup coconut toss again to combine.
    Refrigerate for one hour before serving.

    Enjoy !

    This sounds really good. My wife and I are huge cilantro people, so I think I will give this a try. Will post back.

    Just made this for a Mother's Day dinner I'm doing for my wife -- and it's fantastic. The funny part, is that I was at the grocery store collecting ingredients for the dinner (grilled flank steak, twice-baked potatoes, pineapple salad), and the only thing left to find was the toasted coconut. I looked all up and down the baking aisle -- but nothing. So I picke3d up a bag of shredded coconut, happened to look at the back...and you have to make toasted coconut yourself -- ROFL. Shit, I didn't know. You just put it on a cookie sheet in the oven. Anyway, the salad is really good, and it's been added to our recipe collection

    That's aswome I was going to reply that my wife "LOVES" cilantro; we've got it a couple of plants started in the garden. I'll have to try this recepie out also.

    This sounds delicious! I'll have to make it for my memorial day pic-nic coming up for work. They are all expecting my red potato salad as well. I'll get that recipe up here later.

    I've had people try my potato salad that hate potato salad and they went back for seconds. So if yo aren't a fan of normal potato salad than i bet you'll like mine.

    Famous last words my friend. I hat everybody's potato salad. Like all of the ingredients in it -- but not together. I've disappointed many a "favorite aunt" and good friend's mom when it comes to this Just not for me.

    @Strap -- I added mandarin oranges to it this time -- even better
