Very simple and is only limited by your imagination (and your willingness to eat what you come up with). As always, measurements are not always exact.
1 Onion (I like red onions)
2 Tbsp. Chopped garlic
5 Potatoes chopped into 1/4" cubes
2 C. milk
3 tsp. Chicken broth (3 cubes)
Salt
Pepper
Basil
Dill
Water
Saute the onion and garlic in some oil/butter/cooking spray. Put everything in a pot and fill with water to cover the potatoes. Cook until the potatoes are done (30-40min?). Mash some of the potatoes against the wall of the pot with a fork to thicken.
You can add just about anything, or substitute different spices. Very easy and healthy.

I hope this potato soup tastes like the kind that they server at Panera Bread cause I Love their potato soup!
But i have not exactly tried any other kind of potato soup so i should try this out sometime. Thanks!
